Coconut Chutney Recipe
Ingredients:
1 cup fresh grated coconut (or frozen)
2 tbsp roasted chana dal (optional for texture)
1-2 green chilies (adjust to spice level)
1-inch piece of ginger
1 tbsp tamarind pulp or lemon juice
Salt to taste
1/2 cup water (adjust for desired consistency)
For Tempering:
1 tsp mustard seeds
1/2 tsp cumin seeds
1-2 dried red chilies
1 tsp oil
A pinch of hing (asafoetida)
Instructions:
Blend the chutney: In a blender, add the grated coconut, roasted chana dal, green chilies, ginger, tamarind or lemon juice, salt, and water. Blend until smooth. You can add more water to adjust the consistency.
Prepare the tempering: Heat oil in a small pan. Add mustard seeds, cumin seeds, dried red chilies, and a pinch of hing. Once the seeds splutter, remove from heat.
Mix the tempering: Pour the tempering over the coconut chutney and mix well.
Serve: Serve the chutney fresh with idli, dosa, or any snack of your choice!
